    Prepare the chicken: Add barbeque sauce, dijon mustard, yellow mustard, honey, salt, and pepper into a bowl and mix. Add shredded chicken and stir to coat.

    Prepare the sauce in a bowl

    Preheat the broiler on the highest setting.

    Prepare your sandwich fixings if you haven’t already.

    Place the tops and bottoms of the bread on an oven-safe tray or plate, insides facing up, and toast under the broiler for 1–2 minutes until nicely browned.

    Spread the sauce generously on both the bread (you should use all of the sauce for two six-inch sandwiches). Set aside the top pieces.

    To the bottom pieces, sprinkle half of the cheese, then top with the chicken, and then the rest of the cheese. Broil for one minute or until cheese is melted and bubbly.

    Pile your sandwich fixings on top of the melted cheese-y chicken, then top with the tops of the bread. Eat immediately and without shame. Ensure you have plenty of napkins handy.
